Vegan Barbecue Sauce

Are you planning a vegan barbecue this 4th of July?  If you are (and, really, even if you're not), you will need and want this sweet sauce.

Slather this thick sauce on your veggie burgers, vegan ribs, and vegan chicken.  Also, you can use this sauce as a dip for fries and grilled tempeh (like I did today!).

Ingredients:

1 T organic extra virgin olive oil
1/2 cup organic red onion, minced
1/2 cup organic sun dried tomatoes
2 medium organic tomatoes, diced
1/4 cup organic apple cider vinegar
3 T organic brown sugar
1 t chive salt
3/4 t organic garlic powder
3/4 t organic onion powder
3/4 t organic smoked chili flakes
3/4 t organic paprika
1 T organic Dijon mustard
1/2 t liquid smoke

Method:

In a medium sized pot, sauté onions in the olive oil until tender.  Add remaining ingredients and cook over medium heat until mixture beings to boil.  Reduce heat to a simmer and cook for 5 minutes, stir occasionally.

Carefully transfer the hot mixture to a blender and blend until smooth.

Store in a container with a secure lid.  Refrigerate after use.
