Vegan Campfire Banana




This delicious treat comes from my Girl Scout days.  I don't remember going camping to earn a badge, but I do remember making these over a fire somewhere with my fellow Girl Scouts.  No matter, at least I remembered how to make these banana beauties.  The banana gets warm and the toppings melt or heat up inside of the banana.  When you open the foil to reveal your creation get ready to enjoy a dessert like no other.

You can fill the banana with anything you like.  I do enjoy just chocolate and nuts though.  Actually, as I write this post I just thought of adding vegan marshmallows.  How good would that be?  Melted chocolate over melted vegan marshmallows topped with peanuts, or how about crumbled graham cracker? Yum!!

Set-up a banana bar at your next cookout and supply a assortment of toppings for your guests to be creative with.


Ingredients:

Organic banana
Assorted toppings

Method:

Layout a piece of aluminum foil, place a banana on top with the peel on, and carefully slice the banana from top to bottom.  



Gently open the banana and fill with toppings.





Fold the sides of the foil up and around the banana making sure all seams are closed.  Leave the stem uncovered, this will become your handle when placing on and removing from the fire.


Place on a grill, on top of a chiminea or over a campfire.  Leave banana over flame or heat for 10-15 minutes.  

You can carefully open the foil to peak to see if the your toppings have melted enough to your liking.  Carefully remove with tongs and place on a plate.  The foil will be hot, so you may want to use a fork to help pry open the foil.

Now dig in and enjoy!
