Vegan Peanut and Raisin Clusters
I wanted to have some chocolate candy this afternoon. And, I also wanted to make it quickly because I wasn't really in the mood to make anything complicated. Chocolate clusters to the rescue! You can use any type of nut you want, add raisins and this candy becomes a nutty, chewy sweet.
So, if you are tight on time, or just feeling lazy, these clusters have your name written all over them!
Ingredients:
One 12 ounce bag of vegan chocolate chips
2 cups organic salted peanuts (or any nut, or nut mixture, you prefer)
1 cup organic raisins
Line two baking sheets with unbleached parchment paper, set aside.
Melt the chocolate in a double boiler; once chocolate is melted remove from heat, add nuts and raisins, mix well.
Using a tablespoon, drop clusters onto the lined baking sheet. Put baking sheets in the refrigerator for 15 minutes. After the clusters have firmed up, remove from baking sheets and place in a large bowl and keep in the refrigerator.
